Chocolate Melting Moments

Mmm... guess what I'm having for morning tea?

These deliciously moreish cookies are my daughter's favourite. Whenever I suggest we do some baking, these are first on her list. They are quite different to the traditional melting moment, but well worth a taste. They might even become a new favourite in your kitchen too!

Chocolate Melting Moments

Makes about 20 biscuits


  • 250g butter
  • 3/4 cup icing sugar
  • 1/3 cup corn flour
  • 1 1/4 cups plain flour
  • 1/3 cup cocoa powder


Preheat oven to 160C/320F

Beat butter and icing sugar until light and creamy.

Fold in sifted flours and cocoa until a soft dough forms.

Roll teaspoon sized mixture into balls and place onto paper-lined trays. Press with a fork and flatten to about 1cm thick.

Bake for 15 minutes.

Stand on trays to cool for 10 minutes then gently remove to a rack to cool completely.

Once cool, sandwich together with your choice of icing - vanilla, coffee, chocolate, hazelnut, peppermint, etc.
